I mean, that's not particularly impressive in the OHL right? But seems like the stats don't tell the whole story with him, either.
Nope, over 1.5 PPG is impressive. He is #28 in scoring among centers in OHL. Morgan Frost and Akil Thomas that were taken after him are 1,97 and 1.69 PPG.

In his interview with NHL.com Jarmo said he expects both Merzlikins and Vehvilainen to be NHL ready next season.

We have Joonas Korpisalo and Elvis Merzlikins and Veini Vehviläinen. Those guys, Merzlikins and Vehviläinen, are ready to play in North America next year, and whether they can replace Sergei Bobrovsky, those are going to be big shoes to fill since he's a two-time Vezina Trophy winner...

He is improving and impacting games. That is all I care about.

I care and empty net goals are not equal to PP or even strength goals.
Nothing against you personally, but I feel like this kind of mindset is misguided (and I'm guilty of it myself sometimes). Foudy scoring 40 goals in the OHL doesn't mean he's going to be a better player than if he scores 39, or worse than if he scores 41. The numbers he puts up in the OHL are useful only inasmuch as they give us some idea of how well he's playing. It's not like a video game, he doesn't get +75 EXP for an even-strength goal and +25 for an empty-netter. You can get more valuable information about how a guy's playing from stuff like looking at what situations a player is used in, or how much time on ice he gets, or whether he gets PP/PK time, than you can just from looking at how many goals and assists he scores. These players' coaches see a lot more of them than we do and they obviously aren't basing these decisions just on point totals. It'd be nice if we could watch every game each of the 30+ prospects in the system plays to develop our opinions of them, but we can't, so the next best thing is trying to infer what people with more experience in the game than us think about them.

If you watch him over previous years, his speed is what helps him to score empty net goals. He is faster than almost everyone in the league so scoring an empty netter is almost expected.

Also depending on when the goalie is pulled, there could be multiple line changes over the course of time. Just because he scored does not mean he was “trusted” he could be the third line up since the goalie was pulled and score a goal.

Even strength goals are a much better indicator of NHL success and projections than total imo. I wanted to know because I was curious about what percentage of his goals were empty-netters considering the top scorers in the NHL hover around 4%.

Liam Foudy

FWIW, Similar points trajectory in juniors. Both are loaded with speed and Anderson has shown he's already a 20 goal scorer in the NHL.

Same team, same coach, same system. Dale Hunter (coach of London) has developed tons of NHL talent so I'm comfortable with where Foudy's scoring levels are now. Top 6 potential one would think.
