Yeah, you can have three reserves. There aren't enough players at each positions to allow you to load up though. There are only enough defenceman for each team to take 1 extra, enough forwards to take a maximum of 2 per team, and more than enough goalies to allow for a 3rd stringer. So in picking your reserves, you can have the following reserve combinations:

-2 forwards and either a defenceman or a goalie
-1 forward, 1 defenceman, 1 goalie.
