I've done shoulder, ribs, brisket, tri tip, and chicken thighs.

Boneless chicken thighs with Weber's Honey Garlic rub then sat in a good local stout for 2 hours. Then more rub and smoked over hickory until 165 degrees. OMG chicken that melted as you bit into it.
Smoked tri tip is a thing of beauty if done right. Pork shoulders are my go-to because you really can't go wrong with delicious pulled pork. That and before I started smoking a little, my NC friends did most of the cooking at BBQ's, and those people don't believe in eating anything other than pork BBQ.

Might as well finish off the Mexican vacation pics by showing the buffet that was available for lunch and supper every day.

I think you are a foodie too. Did you do a food tour while there?
Is there a night market?

Research is important for planning future trips
I like food...yes. The wife always takes tons of pics on vacation....we had over 1500 in the 7 days...lol. Food, animals, beach, pools, plants, architecture, etc...

No food tour...except going to the buffets...lol. And fwiw, there were 3 different buffets you could go to. And the wife just pointed out another buffet so those pics are about to be shown. As for a night market, not sure what you mean specifically. But they had 2 nights where locals set up booths to sell things they made/wanted to sell. But there were stores all thru the resort too and also a shopping area, a casino, golf course, etc... Huge resort.

this was where we stayed if you want to check it out.

We stayed in the Pariso Lindo section but there were 3 other sections on the same resort.
