They've all been devoured.

I rubbed them down with mustard, then a dry rub. Only liquids were honey and butter on the meat side and BBQ sauce on the bone side when I wrapped them in foil for the second cooking phase.
the mustard with the rub makes a really nice crust on pork sholder and brisket. i use apple juice and apple cider vinegar, in a spray bottle, to spray on the meat every few hours. helps keep the meat moist.

These ribs cook fast enough that that isn't a concern. The BBQ was a mix of some of the rub, sweet baby Ray's, and apple juice and apple cider vinegar. The latter two are essential bbq tools

Think of all the things you’ve ever said. This is the first time I’ve been worried about you.

Made a roast tonight to slice down into roast beef sandwiches for lunch tomorrow with some green tea wasabi hot sauce. I'm not home, so I had to MacGyver it a bit, but it came out nice and rare on the inside.

Ribs in the oven: pretty darn good also
Season, wrap in foil, 215 in oven for 5ish hours, sauce em a bit, broil on high for 15 mins to get some crisp there.
You can even cook them at a higher temp like 325....just add water to the bottom of the pan and instead of wrapping the ribs, you put the tinfoil over the edges of the pan. Essentially steams the meat. Just add hot water after about an hour if it needs more.

Then follow what you said about adding sauce, and broil.

Then save all the water/juice and put into a bowl and throw it in the fridge. The next day, scrape off all the fat that floated to the top and solidifies....and chuck it. Save the rest to use in a soup, make au jus, etc...

We’ve been thinking about giving them a shot as there meals actually sound really good, and we could both afford to shed a few pounds.

My wife and I have used a company called Kettlebell Kitchen off and on for a while now. Everything is delicious and they have a bunch of standard options and specials each week. You can either pick up the food from a participating gym location or have it delivered to you for a cost. Worth at least checking out to see if it's something you'd be into. Guys, I ate to much and puked about 4 hrs later.

Job had a pizza and wings party.

4 slices, 5 wings I was good.

They bought 3 huge pies and the team and I went threw the 2 in minutes and destroyed the wings.

Then the final pie the team ate half leaving 4 final slices. 2 went to others leaving the final 2 slices and they said I finish it.

I didn't want to I was 4 slices in. But hell I did it.

Then 4 hrs later when I got home had to puke some. Thankfully wasnt a full puke, but to much grease.

My metabolism not what it once was.

I like food...yes. The wife always takes tons of pics on vacation....we had over 1500 in the 7 days...lol. Food, animals, beach, pools, plants, architecture, etc...

No food tour...except going to the buffets...lol. And fwiw, there were 3 different buffets you could go to. And the wife just pointed out another buffet so those pics are about to be shown. As for a night market, not sure what you mean specifically. But they had 2 nights where locals set up booths to sell things they made/wanted to sell. But there were stores all thru the resort too and also a shopping area, a casino, golf course, etc... Huge resort.

this was where we stayed if you want to check it out.

Iberostar Selection Paraíso Lindo

We stayed in the Pariso Lindo section but there were 3 other sections on the same resort.

This may be a real dumb question... but it has been mucho years since we went to a Cancun/Maya Resort... are the prices listed Daily Rack Rates, like on Hotels... or, since we are talking All-Inclusive (I'm assuming), are they per Person? I'm guessing they are PP... When we went the Peso was so bad and the Deals were so great... That said, we only went to an All-Inclusive there the last time we went to Cancun... and that was a real good Deal, albeit way below the 5-Star quality that Iberostar Resort is. Looks like that rivals Sandals... Were the drinks included also?

The Buffets pictures look outstanding... looks like you had a great time. :thumbu:

This was our most expensive booking, and it was just under $2000 per person for the week. Included the air fair, accommodations, all food, and all liquor. We usually can find deals in the 1000-1500 range but not this year. And we have only booked 4.5 or 5 star resorts. With those, you know you likely getting great food, nice beach, and resort.

And like the resort had multiple massive pools, then also some "quiet" ones that were more secluded. They had waitress service right in the beach and at the pools. At night, there were shows at 2 different theatrs with each night a different act. There was a 70's theme, a Michael Jackson show, a circus one, a traditional Mexican one, etc...

Also had tennis courts, archery section, bikes to ride, a huge gym, casino, disco for late night dancing, a sports bar that actually showed the hockey games and you could order wings, burgers, nachos, fries etc... for free.

Just so much to do and see. The only bad part on this visit, was there was a storm that came thru 1 day and stirred up a ton of seaweed on the beach. So the workers were constantly working to clean it up. But hey, it's nature. These things happen.

Maybe someday we should create a travel thread to share all these things especially since there are lots of fans living in other countries. Can give lots of opinions on trips, great places to go, etc...
