So, probably a really dumb question but I might want to start getting into reading all the books but I can't figure out what the order is. I go on Amazon for the full collection and it gives me the 7 book collection:

But when I start looking at the order to read them, websites are showing there much more than 7 books?

So, I'm a bit confused at the moment
Game of Thrones through Dance of Dragons (and the last two if they ever come out) is the main GOT story. Fire and Blood is a history of the Targaryen family (of which something like 150 pages are what HOTD is based on). The rest I believe are novellas (I must admit I've only read a couple of them) that add to the world building but aren't really essential to the main story.
I would suggest starting with Game of Thrones and doing the main story first, then maybe go back and do the novellas or Fire and Blood. Unless you don't want to know what happens in the next few seasons of HOTD, then you might want to hold off on Fire and Blood until after the series is done.

That is the order I would suggest but really the order of those three things can be switched around without causing any big issue.
Fire and Blood is the Chronological start of the series. It starts off detailing the Targ's flight from Valyria (though really it starts at Aegon's conquest) and goes until the ascension of Aegon III, which is right after the Dance of Dragon's, which is what HOTD is covering.I'm interested in reading for the first time too. The last novel, chronologically, is A Dance of Dragon's, which is like Season 5-6 of GoT (I think. The show went to shit after S3, and it white washes A TON OF CHARACTERS, so I stopped watching).

Just start at the main series. They are brilliantly written. His style is so decedent. Just be aware that when you go to Fire & Blood the style changes from 3rd person POV to more of history book format. The only other one I read was Hedge Knight.
