What exactly constitutes a prospect? I'm confused as to why Landy, Read, RNH, and Eakin are all prospects even after having played 100+ NHL games.

Any players drafted in our two previous entry drafts are not subject to keeper rules. Before any trades this year Montreal had Mikael Granlund, Jack Campbell, Martin Marincin, Austin Watson, Sami Vatanen, Morgan Rielly, Michael Matheson, and Lukas Sutter as their prospects.
Players that were drafted in either the first entry draft or the prospect draft.
Need more opinions on 7 or 8 keepers, since that is something that needs to be decided very soon.
Would rather 7, myself. Talent pool is already fairly diluted with all the prospects growing into NHLers.
If you go to 8 keepers than I would institute a standard where a prospect graduates to roster player after X amount of NHL games played.
Otherwise, 7.
