I can tell you from personal experience that numerous NHLers have fantastic hands. It is just having the mentality, the decision-making ability, and the ability to consistently do it under pressure with very little time. Even a modest failure rate means the player is better off making the safer play.

Not to beat a dead horse, but Crosby 1st SO goal. People were literally laughing and now moves like that are 'meh'.
