The theory always was that black stick tape made it harder for goalies to pick up the puck on a sticks and that white goalie pads (ala Cam Ward) made it harder to distinguish between the ice/boards.

I believe statistically there has never been anything to back these ideas up. They're just hockey old wives tales.
