Fair. I'd like to try making fermented hot sauce one day. Not there yet either

mold is my primary concern, but odour is definitely one too

sterilization of jars and apparels isn't much of a concern though, i do pickled stuff quite often

but really, i'm scared as hell of mold, i legit never buy strawberries or raspberries because of it unless i'm going to eat the whole basket the same day
