Yea, if he drops and grabs his face like he's dying, then it's going to be a red.

But instead he reacted like he's a grown adult and didn't roll around so the officials ignore it.

If you wanna know why players do stuff like Son did when the ball gently tapped him in the back of the leg, it's because they've been repeatedly shown that if they don't overreact to things the officials will ignore it.
