OK forgive me for my stupidity since I haven't watched NXT TV in a long ass time and only watch the specials, but what is the story with Strong teaming with AOP and has AOP turned babyface because of Undisputed?

Undisputed are the heels, AoP fell into being faces as did Sanity. It was like a clean turn moment or anything, just the fact of the situations.

Undisputed were trying to recruit Strong to join them, but he said no and made the save for AoP during one of the many clashes over the past weeks.
