I don’t get it….every goalie has more than one custom made mask, right? Why don’t the equipment folks bring multiple masks to each game?

Like, you're partly right and partly wrong. Like, if a goal for you is only half as "good" as a goal against would be "bad", it stands to reason you should err on the side of defence at a rate of 2:1. But that still means going for O zone pressure, yeah? Just not pinching D or other stuff. Like the flat-out turtle shit (say, 5:1 or more) is really a 6-on-5 strat at most. I haven't done the math but I bet you they absolutely converge.
