I didnt make the rules, but by going off the rules where you cant pick the same player consecutively, I'm going to say you cant pick Shutout consecutively or more than twice in one game. Can others who have been here longer chime in?

You are correct. You pick a player each round - shutout is a player - so rules are the same - you can't pick the same player in back to back rounds.
The four people above must pick an actual player - Ennis, Stewart, Girgensons etc - for the Dallas game on Saturday.
They are allowed to pick shutout again - only one more time in this game - starting with the Islanders game on Sunday.
Thats only if they and this game continues after the Dallas game on Saturday.

Edit - Of course should this game end after the Dallas game on Saturday - they can also pick shutout on Sunday for the new game which would be Game Sixteen.
