Yep. It’s very possible.
You can choose if you want to receive the kickoff, want to kick, want to defer your choice to the 2nd half, or which end zone you want to defend. I think those are all of the options.

The ref is not a parent. He said he wants to kick twice, then as the ref turns to the rams he scrambles and says 'WE DEFER'. Sorry pal

Agreed. The ref tried to help him out by asking essentially “are you sure?” That’s not his job and it’s unfair to the other team. In peewee? Sure help him out. In the NFL? No.
