Actually, legal liability. Coca-Cola has the word Coke trademarked, and to prevent it from becoming a genericized trademark, they have people that go nationwide to restaurants to order a Coke and give legal warning and/or notice of copyright infringement to restaurant owners if they serve something else, like Pepsi.
