Have Brady @ Denver or Winston @ Dallas, I want to play Brady cause he is the GOAT, however my opponent has Evans, just thinking strategy wise if I should play him to get some of those points for any Evans TD's.

I'd go with Winston in this scenario. Brady is the GOAT, but Denver's defense is obviously really good.

Also, I have Denver D/ST. Want to pick up Oakland and play them this week. Do I drop Denver? I have AJ Green, Melvin Gordon, Kyle Rudolph and Tevin Coleman on my bench. Don't wanna drop the first 2 even though they're hurt... and the other 2 are useful. Who do I drop?

My opponent has Julio, so with him out he is either going to start Sanu or AP (looks like he's gonna get the start vs Indy)

I have a decision to make for my flex:

Watkins vs CLE
Gabriel vs SF

We have a pretty even matchup so I don't exactly need a home run hitter, but I pretty much see these 3 as even right now.

I'd cut Rudolph if you really want Oakland's defense.

I would wait until the 1pm games are almost over to decide since Gabriel and Sanders both play later in the day. Gabriel would be the boom/bust option, while Sanders would be the safer play. I would make the decision based on how the matchup looks around 3:45pm ET. I wouldn't consider Watkins.
