Was curious to know which non drafted college players would be getting interest from NHL scouts and would likely be signed come the end of the college season in a couple of months.

There are several that could (and I stress could) be signed at season's end. Since you inquired about just seniors, they're the only ones that I've included. Here's a partial list (in no particular order):

Drew LeBlanc - St. Cloud State
Antoine Laganiere - Yale
Eriah Hayes - Minnesota State-Mankato
Pat Mullane, Steven Whitney and Parker Milner - Boston College
Rylan Schwartz and Mike Boivin - Colorado College
Kyle Bonis - Ferris State
Tim Schaller - Providence College
Mike Seidel - Minnesota-Duluth
Kyle Bodie and Wayne Simpson - Union College

Thank you OC.

Can you tell me who would be the best eligible D-man from this list?

Boivin is the lone defenseman on the list I gave you. Another senior defenseman that will likely get more than a few looks is Union College's Greg Coburn. Yes, he's Braydon's brother. Greg is having another strong year for the Dutchmen and has been just lethal on their PP. Like his brother, Greg also plays with a lot of grit too.
