where to watch Vegas Knights...

It's hard to tell who has Cox and who has DirecTV, so there's a lot of great places I won't suggest because of the cable issue.
The D Downtown is the official downtown casino of the Knights and will have watch parties for the games, but the fan fest is cancelled for tomorrow and I'm fairly sure they planned on doing the watch parties in the same place as the fan fest, so who knows what they're going to wind up doing?
Other than that, you can always hit the sports books, they'll have pretty much everything on TV, but going up against other sports means the sound might not be on the hockey game since they cater to the people in the sports book and not the local (Knights fan) population. If you're looking for more local places, most of the local bars will have the games on, Born and Raised is a solid spot to check if you don't mind a local watering hole. If you don't have an issue with driving to Summerlin, you can always watch at MacKenzie River in the Knights practice facility and watch a game in the Knights actual home. It's a lot more mellow.
There's a team watch party for the Dallas game at TopGolf on Koval behind the MGM, I'm pretty sure that's still on.
