Sauce is plant based, gravy is made with the drippings off of meat. In “some” cases it’s actually correct to say gravy.

Definition of gravy
1: a sauce made from the thickened and seasoned juices of cooked meat


So once you add the meat and cook it down it's GRAVY!

I'm a combined heritage of Irish and German/Austrian so I don't really care either. But my Italian heritage friends will blow a gasket if I go against it.
