Already taken and mentioned (I think), but in tribute to the now defunct Las Vegas Thunder:

T-Mo Thunderdome

http://www.youtube.com/watch?v=v2AC41dglnM

Imagine with this theme song in the background:

"Live, from the T-Mo Thunderdome, it's the Vegas Knights facing the consecutive Stanley-Cup-winning Pittsburgh Penguins ...." Fade to black ....

Going with the black night theme you could do a homage to monty python and call the building the HOLY GRAIL or GRAIL. Another knight related theme could be EXCALIBUR.

I have to admit though Sin Bin seems a no brainer for a Las Vegas iceplex.

I keep going Madhouse because of my Chicago thing.

The Castle on Park Avenue
The Madhouse on (Dean) Martin
The Round Table
The Magenta Madhouse
The T
The Medieval Madhouse
The Dungeon

I can't stop thinking of madhouses.

Not the Stable?

T-mo rolls off the tongue easy.

The arena itself looks kind of like a Bird's nest.

The Excalibur is a casino across the street from the arena.

PETRO SUCKS
It may be simplistic, but calling it "The Table" feels right to me. Obviously a nod to any of the pit games. Announcers can even play it up, " Welcome to The Table ( where the house/home team always wins )"
