Good question.
I thought I heard that there was going to be two: a guy in a Knight costume, as well as a traditional animal mascot. And if that animal isn't a horse, I'll be dumbfounded (considering the obvious connection and the fact that horse is one of the few animals not represented by an NHL mascot).

I'd go with a court jester. Then have him pullin pranks and whatnot during games, gettin foolish with the crowd, etc.
