Consistency is just a buzzword that people throw around, just like how the captaincy is overrated or a goaltender making saves "when they matter" as if saves in the first period of a game don't matter. Yeah if players are EXTREMELY streaky like 40 pts in 40 games and 0 pts in 40 games type streaky it's a problem, but it's just not realistic to hover around the same production throughout a year. Yeah it's bad if a goaltender is a choker who crumbles under pressure, but every save matters regardless of when it is unless it's in a blowout game.
Even so, unless you're a powerhouse team where you're clearly better than most teams in the league, an alleged streaky player can be a good thing. A 6th seed team is far more likely to have a deep run if one of those "streaky" players gets hot in the playoffs rather than playing at a consistent above average level.
It's a team game and the fewer points you have, the streakier you are, but your other teammates will balance it out. As long as 1. you're consistent on a year to year basis and 2. consistent in how you play (not playing like garbage and bleeding goals and then playing like a man possessed) your point totals will even out. Like Goldobin's shooting % was ridiculously low, he hit posts, goalies absolutely robbed him, but game in game out he was getting scoring chances and you cannot blame him for the natural variance that is completely out of his control.
