Tortilla soup... Doesn't get any easier. All canned goods and spices, although obviously you could cook your own chicken fresh, etc. But this is a good pantry staple buster.

Canned white meat chicken
Can of pinto beans
Can of black beans (I didn't have any so used red kidney beans)
Can of corn
Can of diced tomatoes
Can of enchilada sauce
Can of chicken broth
Packet of taco seasoning
Teaspoon each of cumin, chili powder, and garlic powder (I didn't measure, just kinda tossed some in, with a couple shakes of black pepper)

Dump it all in the pressure cooker and set for four minutes. Quick release at the end and presto, soup's on.

Great for me because it doesn't leave me with gallons of leftovers but there's plenty to make several meals. Lots of flavor.

There is a restaurant in Stowe Vt. called Piecasso that had the greatest tortilla soup I’ve ever had.

If you’re ever up that way, it’s Definitely worth it.

Steaming shrimp and broccoli with lemon and garlic in the instant pot. Never tried it before so I hope it turns out.

I thought I had some Old Bay in the pantry but I don't. :(

Edit: broccoli was good, shrimp was a little tough but still edible. I still have trouble seasoning things like this though.

I’m in a weird place food wise lately.

I find myself lukewarm to lots and lots of foods that I once often craved.

This includes take out foods as well as things we make at home.

I haven’t had More than 5 or 6 meals that I was really happy with in the last 4 months or so.

Sounds good. With shrimp, a bit of old bay, garlic & fresh lemon juice.

Shrimp cocktail, in addition to cocktail sauce, which can be enhanced by horseradish and red pepper flakes, try just salt and fresh lemon juice. You’ll taste the shrimp in a subtle way.

Hammered the steak by accident (ran out of gas, had to switch to the oven, it was a thing) but this was a great meal.

Steak with garlic rosemary fries from the air fryer and an arugula and watermelon salad

Hmmmm. I'm really tired of our local pizza chains, the quality gets worse all the time it seems. I might have to try a frozen one sometime. Although I do like the take and bake from Papa Murphy's. And Kroger's isn't bad either.

We've become big fans of Dirty Water Dough Co. in South Boston and on Newbury St.

Great thin crust pizza.

That's the covid-19 effect. I'm a Chef ( 41 years in the business) and I have found I hard to enjoy anything I have eaten in months, I'm usually very easy to satisfy and normally enjoy very simple food (mostly grilled meats, fish and vegetables) but it's been a while since anything has gotten me going
