I think the obvious answer for both are actually
"Great Scott!" and "This is heavy"

Will Ferell deliverer of many iconic lines
"Stay classy San Diego"
or
"Buddy the elf what's your favorite color"
??

Dana Carvey and Mike Meyers collectively
"SCHWING!"
even though pretty much all of Wayne's World could qualify

"Malkovich, Malkovich, Malkovich"-John Malkovich

Ferrell's could be "We're going streaking!"

Mike Myers' could be "Do I make you horny? or "Yeah, baby!". Or even one of Dr. Evil's lines

Michael Caine - "Some men just want to watch the world burn."

Anthony Hopkins - "A census taker once tried to test me. I ate his liver with some fava beans and a nice chianti."

Stephen Baldwin - "GIVE ME THE ****ING KEYS YOU ****SUCKING MOTHER****ER!"

"The first rule of Fight Club is: You do not talk about Fight Club. The second rule of Fight Club is: You do not talk about Fight Club."- Brad Pitt

"Yeah, well, you know, that's just, like, your opinion, man"- Jeff Bridges

"Rum Hammm!"-Danny Devito
For Brad Pitt I like “Aww, what’s in the box?! What’s in the f***ing box?!”

Anyone who seen Joaquin Phoenix in the Joker does he have a line you would say is or could become his most iconic?

It's weird that the Indiana Jones franchise doesn't have more iconic lines. Most memorable from those movies are probably "Fortune and Glory" an "Why did it have to be snakes?"
The most iconic Indiana Jones scene has no lines. It's the scene when the crowd parts and Mr. Big Sword starts showing off. Indy shrugs and shoots him.

Yeah, that or the moment of anticipation at the start of Raiders. Guess it makes sense with him being the strong silent type character.

It's funny, I'm a huge Star Wars & Indiana Jones fan, but "Get off my plane" and "I didn't kill my wife" were the first two I thought of. Han Solo's lines that stood out were "I Know", "Never tell me the odds", "Punch It, Chewie", and "It's the ship that made the Kessel run in 12 parsecs". There are loads of tons of others that are equally/almost as good, but none are quite uniquely iconic.

For Indiana Jones, "Don't call me junior" and "Why'd it have to be snakes" are the best, but much like Han Solo, the character and the actor are iconic, but maybe he has too many good lines to pinpoint one in particular.
