Does the AHL have a protocol for potential Olympic team selections?

not that it's likely to happen, but it's possible that someone like Girgensons or Mursak if they were still in the AHL or some other top prospect for a not-so-strong hockey nation would be selected by their country to participate in the Olympics.

The AHL plays through the Olympics, so does the AHL have to let a hypothetical player go?

Edit: shoulda done more research, seems like there's quite a few AHLers going to Sochi. So what is the protocol then? do they have to let the players go because the NHL has a deal?

The Milwaukee Admirals played at 1 PM today, instead of 5 PM, so Simon Moser could hop a plane and get to the Olympics about 3 AM. He will be playing for the Swiss.
