What is amazing about youtube is that if you are into acoustic music you can just search a song on there and there's a good chance that the artist did an acoustic version for a radio station or some sort of live event.

Someone above mentioned the Neil Young Live at Massey Hall in 1971. It’s a great listen to an artist on the verge of becoming a superstar. After he released After the Gold Rush but before Harvest came out and he’s still working on some of the songs on that album.
The Eric Clapton unplugged one is great as well.
