"4 against 4" would make more sense than "4 and 4." That said, does it really matter? "4 on 4" is fine.

If you're a delinquent kid challenging some other delinquent kid to a one-on-one fight after school, it just doesn't sound cool enough to say "one and one fight"

Four on four? A situation where 4 individuals face off against 4 other individuals.

Four and four? Eight, that's basic arithmetic.

One of the strangest bumps I have seen.

"One and one" sounds weird.
"One against one" sounds clumsy.
"One on one" has a nice feel to it.

Hence, three on three it is.
