Why didn't the goalie that flipped the net during breakaways make the NHL?

Why aren't more goalies flipping nets?
Because hockey players are smart enough to apply simple sporting principles to their activities. The moment you are dumb enough to abuse the rule in an unsportsmanlike way it gets changed, the new one gets your name and you become widely known as a jackass. For further reading see "The Avery rule".

Does one really want that kind of "fame" for a few weeks before it gets changed to the match penalty for a goalie or something?
